Do you still have a carbohydrate hangover from the Thanksgiving holiday? I definitely enjoyed some of my favorite foods but I’m ready to get back on track with a healthy eating routine for the week. Breakfast is one of my favorite meals of the day, probably because I’m a morning person and feel my best and most productive earlier in the day.
When it comes to finding a breakfast that will keep me full most of the morning, oatmeal has always been my go-to. I love loading it up with apples, a few raisins and delicious spices. This fall I’ve been adding a little pumpkin puree and a few extra spices to my oatmeal to give it a little something extra (taste and nutrition-wise). It’s fantastic with a cup of tea and a great way to start any day of the week.
Cardamom Pumpkin Apple Oatmeal
1 cup of water
½ cup rolled oats
½ cup pumpkin, puree
¼ cup apples, diced
1 tbsp raisins
1 tbsp pecans, chopped
½ tsp ground cinnamon
½ tsp vanilla extract
¼ tsp ground ginger
¼ tsp ground cardamom
1 tsp maple syrup (optional)
Bring 1 cup of water to a boil, stir in oats. Reduce heat to medium and let simmer for 1-minute.
Add pumpkin puree, diced apples, raisins, pecans and spices.
Cook for about 5 minutes over medium-heat, stirring occasionally. Add vanilla extract and maple syrup (optional).
Remove from heat and let stand for 30 seconds before serving.
